Homemade Chicken Pot Pie Soup

During the cold winter months, there is nothing better to warm you up than a nice homemade bowl of soup!  From chowders to savory soups, it is the perfect way to warm up.  Some of our favorite soups start with a soup mix from Halladay Farms.  These are an easy way to start your soup and add all different veggies and proteins to the mix.  Today we are sharing our Homemade Chicken Pot Pie Soup and Homemade Biscuit Recipe, perfect for all of these chilly winter days.  If short on time, you can always use a store biscuit or one of the refrigerated biscuit doughs as a substitute.    

Ingredients for Soup

  • 3 Cups of Cold Water
  • 1 Package of Halladay's Chicken Pot Pie Soup Mix
  • 1 Tablespoon of Butter
  • 3 Celery Ribs, chopped finely
  • 3 Carrots, peeled and chopped finely
  • 1 1/2 Cups of Cooked Chicken (Rotisserie Chicken is a great addition!)
  • 1/2 Cup of Sour Cream

How to Make Chicken Pot Pie Soup

  1. Sauté celery and carrots in butter, over medium heat in a soup pot until tender. 
  2. Combine Chicken Pot Pie Soup mix and water.
  3. Add soup and water mixture to the vegetables on low heat for twenty to thirty minutes.  Stir often.  
  4. Add your cooked chicken and sour cream.  
  5. Cook on very low heat for a few minutes, just until everything is combined and heated through. 
  6. Serve with warm biscuits and enjoy! 

Ingredients for Homemade Biscuits

  • 2 Cups of All Purpose Flour
  • 1 Tablespoon of Baking Powder
  • 1 Tablespoon of Granulated Sugar
  • 1 teaspoon of Salt
  • 6 Tablespoons of Cold Unsalted Butter
  • 3/4 Cup of Whole Milk (Buttermilk would also work.

How to Make Homemade Biscuits

  1. Preheat your oven to 425 degrees and line a cookie sheet. 
  2. Combine flour, baking powder, sugar and salt.  Mix well and set aside. 
  3. Remove the butter from the fridge and cut it into your flour mixture. 
  4. Keep mixing until the mixture looks like coarse crumbs. 
  5. Add in milk and stir until combines. 
  6. Transfer the dough to a floured surface and use your hands to gently work it together.  If it is too sticky add some more flour.  
  7. Once the dough is ready, fold it a few times and using your hands roll it out to about 1 inch thick.  
  8. Using a cookie cutter or biscuit cutter make close cuts and drop the biscuit onto the baking sheet.  
  9. Repeat until you have used all the dough.  
  10. Bake for 12 minutes or until lightly golden brown.  
  11. After removing from the oven, brush with a little extra butter.
